Each field has a key, shown next to its name, generated once from the label you first gave it. Records store their answers under that key.
That is why the label can be corrected at any time without touching a single record, and why the key itself is not editable: changing it would leave every existing answer filed under a name nothing reads.
Removing a field entirely also keeps what was entered, in case you want it back.
